  1. 2 cups campanello pasta, raw

  2. 4 cups broccoli heads

  3. 1-2 cups broccoli stems

  4. 1 teaspoon salt

  5. ½-¾ cup or 8-12 tablespoons – Pachi’s Italian Dressing*

  6. 2 tablespoons diced pimento

  7. 1 tablespoons diced onion

  8. 1 tablespoon fresh oregano

Optional

  1. 1 cup cooked white beans

  2. ½ cup pine nuts


Instructions:

  1. We’re going to use broccoli as our vegetable, we’re going to use pasta, we’re going to use our italian dressing with yogurt to season the pasta, some red pepper (about a tablespoon), and a tablespoon of minced yellow onion. Our flavorful ingredient of today is fresh oregano! And of course, tome salt to season the pasta.

  2. We’ll start first by separating the root of the broccoli but do not throw away the stems, they will be added later on. Prepare to cook the pasta, add in 2 cups of pasta into salted boiling water. After 2-minutes, add in the broccoli with the pasta after 2-minutes add in the stems as well. After another 2-minutes we’re done.

  3. The pasta, the broccoli and the broccoli stems will be ready at the same time strain it and place them together in a bowl. Add a little bit of olive oil, pepper, and salt.

  4. Onions and red pepper will be added as well but it should be on the dressing in this, it will be easier to mix it properly with the salad. You can add a tablespoon of red pepper on top of the pasta just so it look’s good.

  5. Pour the italian dressing on the pasta bowl.This is really healthy and delicious! What’s really good is you can add some chicken, some tuna, shrimp, or anything you feel like.

  6. After pouring the italian, dressing mix it in the bowl. After tasting this, I’m sure that you’ll be makingl this more often! This is one of the best pasta salad that you’ll ever had!

  7. After mixing, add some oregano leaves on top. This will give that fresh oregano flavor to the salad. If you don’t have oregano you can use basil or any other fresh herbs that you have. Another tip, adding tofu or cheese goes along with this pasta salad as well!
